Apricot Muesli Bars
Ingredients
175 g margarine
1/4 cup honey
1/4 cup golden syrup
1/2 cup flour
1/4 cup sugar
2 tablespoons sunflower seeds
1/2 cup wheat germ
1 cup puffed rice cereal
2 cups rolled oats
1/2 cup toasted coconut
1/2 cup chopped dried apricots
Method
- Put the margarine, honey and golden syrup into a 2 litre glass microwave jug. Microwave on High for 1 minute or until margarine has melted.
- Put the flour, sugar, sunflower seeds, wheatgerm, rice cereal, rolled oats, coconut and apricots into a large mixing bowl. Mix to combine.
- Pour the melted ingredients into the bowl with the dry ingredients. Mix thoroughly to combine.
- Press mixture evenly into a 22 cm x 30 cm glass microwave slice dish. Elevate and microwave on High for 4 minutes and 30 seconds. Leave to stand for 2 minutes.
- Cut into bars while warm. Allow to go cold before transferring to an airtight container.
